Roast Beef Salad

Roast Beef Sandwich

Want to double the pleasure from your Roast Beef session? First time you enjoy it with some delicious sides. With the leftovers and some herbs mayonnaise you'll create a badass Roast Beef sandwich. Take it to work and build yourself a bunker around the fridge! As soon as they see you coming with your show-off sandwich they will attempt to lay their hands on it! Be warned!

Equipment

  • Bamix Mixer
  • Pecan wood chunks or pellets

Ingredients
  

Pickled Tomatoes

  • 200 gr. Cherry tomatoes
  • 1 clove Garlic
  • 2 tsp Fresh dill
  • 225 ml white wine vinegar
  • 225 ml water
  • 15 gr salt
  • 10 gr granulated sugar

Pickled Red pointed cabbage

  • 1/2 piece red pointed cabbage thinly sliced
  • 2 Tbsp cider vinegar
  • 1 Tbsp Honey
  • salt and pepper at taste

Herbs Mayonaise

  • 350 ml sunflower oil
  • 1 egg
  • 1 tsp mustard
  • 2 Tbsp Pickling juice from the tomatoes
  • 1 pinch ground cumin
  • 1/2 piece red hot chili pepper thinly chopped
  • 1 handful fresh chives thinly chopped
  • 1 handful fresh parsley thinly chopped
  • 1 handful fresh cilantro thinly chopped

Composition

  • 4 sandwiches
  • 12 slices Black Angus Roast beef cooled down (Recipe link in instructions)
  • lamb's lettuce at taste
  • roasted sesame seeds at taste

Instructions
 

Pickled cherry tomatoes

  • Mix all pickling ingredients and stir until the salt and sugar have been solved.
  • Add the tomatoes and put aside for at least 4hrs.

Sweet and sour red pointed cabbage

  • Mix 2 Tbsp. cider vinegar with 1 Tbsp. Honey and stir in the thinly sliced red pointed cabbage. Taste and bring to flavour with salt and pepper at taste and/or more marinade.
  • Put in the fridge for at least 4 hrs.

For the herb mayonaise

  • Put all ingredients except for the chili pepper and herbs in a small jar. Put the Bamix blender on the bottom and let it spin on the lowest speed until the ingredients start to bind.
  • Switch to high speed while gently going up and down in the jar with the blender. Repeat until all oil is bound.
  • Add the thinlhy chopped herbs and chili pepper and mix thorouhgly.

Composing the sandwich.

  • Cut the sandwich and add the lamb's lettuce.
  • Add three slices of roast beef (recipe) on top of the salad and cover with a layer of herbs mayonaise at taste. Sprinkle with the roasted sesame seeds.
  • Put some pickled cherry tomatoes and sweet and soure pickled red pointed cabbage on top.

Cover the sandwich with the topside of the bread. Time to make your colleagues drool! Or do you share food?
